My cas3 was stolen out of my car. I have an upgraded DME to msd81 and want to keep it. Also have my original keys, and a donor cas3. What's the easiest way to have someone program all this? I kinda read getting matching keys and cas3 from a donor would be, but it all gets confusing.

Have someone read the ISN from your MSD81 and write it to the donor CAS. Your original keys can be used if the person reprogramming the CAS has a tool to unlock used keys.
